Heat oil in a large non stick frypan over medium heat. Add sausage meat, breaking up with a wooden spoon into small chunks. Cook for 4-5 minutes until browned, remove from pan. Set aside.
Add onion, celery and carrot to pan, turn heat to low and sauté for 6-8 minutes or until softened. Stir in Providore d'Italia Paste and cook for a further minute.
Return sausages to pan with bay leaf, cinnamon and nutmeg. Add stock and bring to boil, turn down heat and simmer uncovered over very low heat for 40 minutes. Stir, cover and continue to cook for 20 minutes. Remove bay leaf.
Cook pasta following packet directions, drain and toss through sausage sauce. Serve immediately with grated parmesan.
For a richer sauce add more tomato paste.
