Chicken Chorizo and Chick Pea Bake

Ingredients

  • 400g jar Prodivore d'Italia Provincial Italian Tomatoes with Grilled Bell Peppers Pasta Sauce
  • 400g can Edgell Chick Peas, drained
  • 4 chicken marylands, cut in half
  • 2 potatoes, unpeeled, washed and each cut into 6 wedges
  • 1 chorizo sausage, thinly sliced
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 lemon, cut into wedges

Method

Step 1

Place all ingredients in a large bowl, season to taste and toss well to combine. Transfer to a shallow baking tray, ensuring all residual Prodivore d'Italia Sauce is used.

Step 2

Bake in a preheated oven at 180°C for 1 hour, basting occasionally, until chicken is golden, fully cooked and the potatoes are tender.

Step 3

Serve with a green salad and crusty bread.
